Zephyr (Marshmallows) in Chocolate Glaze
Zephyr are fruit marshmallows popular in Ukraine. They are made by mixing the foam of hen's egg whites with sugar and fruit puree, as well as with pectin, agar or gelatine.
Ingredients: sugar, black confectionery glaze 21%, sugar, vegetable palm fat, partially hardened), reduced-fat cocoa powder, emulsifier- lecithins (from soya), "Chocolate" flavouring, salt, "Vanilla" flavouring, glucose syrup, apple puree, egg white, icing sugar, gelling agent: pectin, acidity regulators: lactic acid, sodium citrate.
